BOWLED OVER • These four soups have two things in common – they’re fast to make, and substantial enough for a main meal. Granted, I have fond memories of coming home from school to Mum’s big red pot of soup, which would have been bubbling away for the better part of the day – it was always the perfect after-school snack in winter – but these days I’m in favour of a soup that’s quick to whip up at a moment’s notice and filling enough to qualify as dinner.
